Homemade minimal ingredient chicken nuggets

This is a small quantity recipe, and can be altered based on your preference- more or less chicken potato or other ingredients.


Just find the combination you like best and for larger batches or to make and freeze for later just multiply the ingredients.


You will need the following ingredients:


  1. One decently large chicken breast (no bone!)

  2. Two potatoes roughly 3” long x2” in diameter

  3. Three large eggs

  4. One 2” thick slice of cheese from a block that was 3”x3” square

  5. Seasonings (I would recommend here that less is more for your first batch- I just used a little bit of garlic and onion powder with a pinch of herb mix. )

  6. You may want a flour of your choice on hand as well

  7. Panko flakes/bread crumbs/flakes cereal crushed

  8. HIGH TEMP oil- avocado oil is the healthiest. I will NEVER recommend venerable or canola oil for frying but use what you like. Olive oil should NEVER be used for frying.


You can put any manner of other ingredients at this stage that you like- but for vegetables I would keep them to 1/4 cup to start with until you find the ratios you prefer.


Step 1.


Blend all of your chicken, seasoning/spices, eggs, potatoes and engraver else-if anything- you’ve decided to add, together- be sure they’re very well blended (you will want to be sure NOT to leave in any tendons in the chicken, however, because it can coil around and burn out your blender blade/motor)


Step 2.

Here I added a little flour to my mix- maybe 1/4 cup- you can use more or less, but you want it to be fairly thick consistency.


Step 3.

Set your oil on the stove in a deep pan or frying pan for frying the nuggets. Bring it to full boil, then reduce heat to medium high or a little above, you need it low enough temp that it’ll not brown the outside too fast but high enough to cook the nuggets through the center.


Step 4.

Once well blended and mixed- pour your bread crumbs/planko flakes/crushed cereal flakes into a square container or bowl (I would recommend having a large plate underneath)


Step 5.

Take a tablespoon and spoon out directly into the flakes. I used two tablespoons separately so I could form the blended mixture and get flakes evenly coating the mixture.


Step 6.

Once your spoonful is completely coated in whatever breading exterior you want, move it to the oil for frying. I used two tablespoons to keep its shape roughly and prevent it from falling apart before hitting the oil.


Step 7.

While the last nugget is frying, repeat steps 5 and 6 until the frying pan is full.


Step 8.

Remove nuggets (they look more like balls or oblong shapes than traditional nuggets) when golden brown- check that the center is cooked before removing the rest. If the center is not cooked through lower your temp slightly and increase fry time. Ensure that your tablespoon quantities are relatively consistent so that your cook time and golden brown color is consistent- we want the chicken in these to be fully cooked.


Step 9.

Salt the exterior of the nuggets and mix with whatever you like on your nuggets - ketchup, mayonnaise, honey mustard or whatever you like and enjoy!


After your first batch to test it out, you can alter the percentages of ingredients as you like, and multiply it- once cooked these are perfect for freezing for quick meals to reheat in the oven/air fryer/microwave as you need!!!
